  • 200g wholemeal flour

  • 70g almond powder

  • 30g of tapioca starch

  • 80g caster sugar

  • 200g soft butter

  • 1 whole egg

  • 2 pinches of salt




The garnish:

  • 500 g of red fruits, strawberries and / or raspberries


Preparation of the dough

1) Mix the butter in a food processor and gradually add the powdered sugar, salt and ground almonds. Mix for a few more minutes then add the egg and continue to mix. At the end, gradually add the flour and tapioca starch and knead until a very smooth dough is obtained.


2) Refrigerate for at least 30 minutes. You can also prepare the dough the day before and leave it refrigerated, but without exceeding 24 hours of refrigeration.


3) Spread the dough directly in a 28cm diameter pie mold and prick the bottom with a fork. Bake for 15 minutes in an oven previously heated to 180 °.

Let cool.

Preparation of the pastry cream

1) Preheat the milk and whisk the egg yolks and sugar until whitened, then add the cornstarch while continuing to whisk. Add the mixture to the pot with the preheated milk, bring to a boil over low heat and let it boil for about a minute while continuing to whisk to prevent the cream from burning at the bottom of the pot.


2) Mix the Matcha powder in a tablespoon of milk. Pour the smoothed mixture into the slightly cooled cream before placing the Matcha powder in it. Incorporate this mixture once it is smooth in the pastry cream.


3) Pour the Matcha pastry cream on the bottom of the pie then garnish with the strawberries
